Description:
Cello Hospitality Group, a leading multi-concept restaurant group in Dubai, is seeking a high-caliber F&B Operations Leader to join our senior management team. This position demands a strategic operations professional capable of managing FOH, BOH, Hygiene, Maintenance, and overall operational excellence across all outlets.

Key Responsibilities:

  • Lead and manage full operations across all restaurant outlets (FOH + BOH).
  • Ensure all outlets comply fully with company SOPs and brand standards.
  • Drive operational excellence, optimize productivity, and maintain smooth guest flow.
  • Oversee hygiene, food safety, cleaning, and maintenance standards.
  • Monitor and improve KPIs including COGS, labor cost, customer satisfaction, and service time.
  • Manage inventory control, variances, ordering processes, and PAR levels.
  • Collaborate with HR on recruitment, training, staff development, and performance management.
  • Coordinate with Finance regarding P&L, budgeting, and operational cost control.
  • Support Marketing initiatives with operational readiness for campaigns, events, and brand activities.
  • Ensure compliance with Dubai Municipality regulations, food safety audits, licensing, and renewals.
  • Lead operational planning for seasonal peaks, high-volume periods, and new branch openings.
  • Coach, mentor, and develop outlet managers to ensure consistent, high-quality execution.

Requirements:

  • Significant experience in F&B operations, particularly in senior multi-outlet roles.
  • Strong knowledge of FOH & BOH operations, HACCP, hygiene, and food safety standards.
  • Proven ability to lead managers and large, diverse teams effectively.
  • Excellent skills in scheduling, labor management, cost control, and workflow optimization.
  • Strong analytical skills to interpret data, generate reports, and drive operational decisions.
  • High attention to detail, organization, follow-up, and execution capabilities.
  • Professional communication skills in English and Arabic.
